| 6 fish fillets 1 1/2 cups dry pancake mix 1 cup 7 UP 1 egg slightly beaten salt and pepper to taste Coat six fish fillets with 1/4 cup reserved dry pancake mix; place on a wire rack for 2 to 3 minutes. Combine remaining ingredients; 1 1/4 cup mix, 7 UP, egg, salt and pepper in a shallow dish; mix thoroughly. Dip fish in batter, coating both sides well. To fry, heat oil in a deep Dutch oven to 350 F. Add fish and fry 1 to 2 minutes on each side or until golden brown and fish flakes when tested with a fork.
