1-3 oz. package lime flavored gelatin 1/2 cup boiling water 1/2 cup 7 UP 1 cup Mott's applesauce 1/4 teaspoon peppermint extract 1/2 cup finely chopped walnuts (optional)
Dissolve gelatin in boiling water. Stir in 7 UP. Refrigerate until thickened (45 to 55 minutes). Beat with an electric mixer until chunky and frothy. Fold in applesauce, walnuts and extract. Spoon into sherbet glasses to serve. Yield: 4 servings
